We sell this pizza (14” size) for 24.13$ CAN$ plus tax, which ends up
at 27.50$ Food cost is about 6.75$ CAN$
Tell us about the pizza: how you came up with the idea, how
you market it and what the customer response has been.
Our chef came up with the idea some 4 years ago, made us taste it and
wow, instantly made it on our menu as a permanent item. This pie
quickly made it to one of our most popular entrees, especially with
women.
The recipe:
- 425 grams Pizza dough;
- 26 grams Basil pesto, spread evenly;
- 28 grams Skim (15% fat) Mozzerella cheese (grated), sprinkeled over
pesto;
- 93 grams Grana Padano Parmesan cheese (shredded) Sprinkeled evenly;
- 14 grams Pine nuts, sprinkeled evenly;
- 120 grams Apple sauce, teaspoon sized dollups, one spread out over pie;
- 130 grams Snow goat cheese, ½ inch by ½ inch by 1 inch “rectancles”,
spread out over pizza between dollups of apple sauce;
- 72 grams Sun dried tomatoes, sliced in ¼ inch wide strips, spaced out
between apple sauce and goat cheese (when using an impinger oven,
burried under goat cheese).
